Mustard seeds and peppers
Mustard can be fun to experiment with. French mustards use red wine vinegars, Dijon uses champagne, Chinese mustards are made with flat beer. The addition of whole mustard seeds (1 tablespoon) will make mustard slightly crunchy.
If you have to thin the mixture with water, remember it will make it hotter|
- 2 tablespoons ground mustard seed
- 2 tablespoons finely corn starch
- 1/2 teaspoon each
ground turmeric, ground ginger and grated horseradish (optional)
- A dash (1/8 teaspoon) of powdered cloves.
- 1/2 cup apple cider vinegar
- 1/4 cup cup warm water
- 1 tablespoon honey
- Fresh lemon slice

:Mix the mustard, cornstarch and spices together. In a separate bowl, mix the vinegar, water and honey together. Combine dry and wet ingredients in a pan and ring to a boil, turn down heat and simmer for 2 minutes. Pour the mixture into a clean jar while still warm, pressing out air pockets. Mustard will keep for months refrigerated, but the flavor is best while fresh. Keeping a fresh slice of lemon in the jar will help to preserve flavor and freshness.
