Horseradish and sauces
As a condiment on beef leave plain, for pork add 1 tablespoon of dry mustard
Substitute 1/2 cup beets for 1/2 cup of the horseradish and add 1 teaspoon
of honey for a milder, slightly sweet and attractive red condiment.
- 1 cup diced horseradish root
- 1/4 cup vinegar
- 1 tablespoon of dry mustard
- Optional: a teaspoon of crushed dill seed, aniseed, or oregano

: Combine horseradish root and vinegar in the blender and run on high speed for 3 minutes to finely grate the horseradish.
